I would suggest leaving the caliper low down and raising the master cylinder, with the rod compressed, overnight and see what happens!
Hopefully, this will dislodge the air bubbles in the system. But the fact that your mention the action being "notchy" would make me suspicious that the old brake fluid needs draining and master cylinder cleaning of any gritty bits and a new set of seals, before re-assembly and filling with new fluid.
Having never tampered with Ducati V twins and only singles drum brakes makes me very unqualified on this subject!
