I've been running a CB500S with a velorex chair for some 3 to 4 years now and I've been very pleased with it. It's my first combination, so I haven't any comparisions with other outfits, but to me i it performs well and has been great as a cheap winter rally hack.
Graham Carrick actually married the bike to the chair for me, so i won't be able to answer specifics on setting it up, I'm afraid (I'm happy to take measurements/photos, though), but I'll be able to answer any more general questions you might have. I've done a few changes to it to myself, mainly to "winterise" it (heated grips, snow tyres & chains, handlebar muffs, power socket) and I've altered the gearing on it (3 teeth up on the rear) to make it more manageable in the snow/mud. It pretty good on fuel economy (circa 50mpg, I think) and it'll hold 70 to 75mph on the motorways fully loaded with all my camping gear (large tipi or bell tent with all the "extras" needed for winter camping comfort!).
I've currently got the chair off the frame in the garage to make life easier in replacing the sidecar swingarm to one with a larger 20mm spindle (I bent the thinner one on a meet in Germany) and to treat the rust that has accumulated through the winter use. Ideally, I'd have had the chassis powder coated prior to when the outfit was first built, but at the time I wanted it all built to a budget as i wasn't sure if I'd be taken with riding an outfit.
